The results of not consuming sufficient vitamins and minerals may include anemia, impaired immunity, birth defects, learning problems, and memory loss. These possible health consequences may be from an absence of wheat since wheat products are often fortified or enriched with vitamins and minerals during processing.

At this time, most gluten-free products are not enriched or fortified with vitamins and minerals. Thereby making you prone to losing a major source of vitamines and minerals.

In the future, perhaps as larger manufacturers are involved in gluten-free, some gluten-free products may be enriched ad fortified to become healthier options. For now, be cognizant of this downsize of being gluten-free; take appropriate action if you believe you are having symptoms.
