Finding myself at Barnes & Nobel on my visit to Maryland recently, I wanted to grab a book while enjoying my coffee. While not looking for Gluten-Free cookbooks too intensely, I found this Paleo cookbook that says “60 delicious gluten- and grain-free recipes without the fuss” called the Simple Paleo Kitchen. I had not paid any attention to yet another “diet plan” book; therefore I knew very little about Paleo (even how to pronounce it). Gluten-free (and grain-free) had my undivided attention along with simple and easy. Essentially it eliminates dairy, grains and refined sugars to maintain a healthy lifestyle. So, if you ignored “Paleo” as I did, it is worth investigating and educating yourself on this additional option.
By the way, I am enjoying the recipes I’ve tried so far. I am especially grateful for the dessert recipes using almond flour.
