I am sharing what I am learning with you. I definitely be adding these tips to improve my GF cooking.
Classic Fried Chicken – try using potato starch instead of cornstarch in your seasoned flour mixture. It suppose to provide a crunchy coating that forms after frying. Remember, from last Wednesday Wisdom blog, to use less potato starch than cornstarch.
Latkes – one of my favorites as I have many different recipes and toppings for latkes. Again instead of using cornstarch and or flour, use potato starch to bind these shredded spuds. So look forward to crispier latkes than using regular flour making the entire dish gluten-free. I see latkes with this new method in my near future! How about you?
