Gluten-Free Diets and Arsenic Risk

What we’re talking about is researchers found those who eat a lot of rice MAY be at risk for consuming unsafe levels of arsenic; a toxic metal that tends to accumulate in rice. This is a concern because many of us on gluten-free diets consume a lot of rice because it is affordable and readily available. Read the labels and rice is the dominant ingredient in our GF breads, cereals, pastas, desserts and other gluten-free products.

Before you stop reading this information, the article is from an online resource “verywell health” written by Jane Anderson, a medical journalist and “an expert in celiac disease, gluten sensitivity, and the gluten-free diet.” The lengthy article was medically reviewed by Carl Victor Crawford, Jr. MD. This article was updated on September 3, 2022. I am presenting the highlights on this topic in several parts since this is a blog. Also my goal on Wednesday Wisdom is to present “bite-size” educational information you can digest (learn) and implement as you see fit. The article’s title is “The Risk of Arsenic in Rice on a Gluten-Free Diet”.

It further states that researchers who surveyed people about their gluten-free diets concluded that a hypothetical person eating median amounts of rice products across the food categories would eat 10 servings of rice per week. This is plain rice, rice-based gluten-free bread, rice-based snacks, etc.

At the Mayo Clinic, researchers measured arsenic in urine samples taken from people with and without celiac disease who followed a gluten-free diet. They compared these results with levels in people not eating gluten-free. The results were found significantly higher for those who ate gluten-free.
