F/U ‘Is there Gluten in that Food’ – Thursday Extra

On December 7 or 8, 2022, I posted about a Virtual Education Event: ‘Is There Gluten in That Food? The Ins and Outs of Testing’. It was presented by a moderator and 3 expert panelists sponsored by Gluten Intolerance Group (GIG).

I admit I didn’t exactly know what was going to be discussed but the topic was on point; about gluten free. Often the discussions were scientific (over my head), but did make sense. Just because they made sense doesn’t translate to me recounting the points easily and accurately. So as promised in this GFA blog, I will try to break down this virtual presentation into a few main points that was of interest to this blogger.

  • Not all GF products are tested; it depends on the manufacturer’s discretion based on their ingredients and manufacturing process
  • When tested FDA requires gluten-free food items to be less than 20 parts per million (PPM). Different countries have different rules
  • There can be different results on the same product batch; called hot spots. Results can be different depending on where the sample is taken (such as the top, middle or the bottom of the batch). So having the product mixed up properly is the goal. Yes, manufacturers can do averaging.
  • A ‘Dedicated Facility’ does not necessarily do equipment testing because it is less risk; however, the ingredients still need testing.
  • Two well known test kits are:
    • Rapid Test – used for home/personal testing, faster time for results and is non-quantitative (giving a yes or no answer). These test kits are often used on a high risk entree (such as veal parmesan) at a restaurant or friend’s house.
    • Eliza Test Kit – used by manufacturers, takes longer for results and gives quantitative results which identifies the offending ingredients and the PPM.
    • With this information and a little more information, my brain was full. I was unaware of the personal test kits. Rapid Test Kits have been available to consumers for about 10 years. I plan to research this test kit further and report back to you.
