Have you ever tried Ethiopian cuisine? If not, you should. It is nearly 100% gluten-free. The flavors of Ethiopian cuisine are a combo of earthy, spicy, tart, sour, and pungent flavors and a base seasoning called Berbere. Berbere is made of chile peppers, fenugreek, cinnamon, ginger, cardamom, and coriander. Good stuff!
Ethiopian Cuisine can be an exciting adventure. Meals are social affairs with foods served on a shared Injera. Injera is a tangy bread made of Teff – a GF grain native to Ethiopia. Diners tear pieces of Injera, scooping up flavorful veggies, stews and spicy meats.
I have enjoyed the Ethiopian Cuisine like this before. Now knowing that it is mostly gluten-free I am ready to look up my local Ethiopian Cuisine! I hope you do the same soon.
